<p>For the onions:</p>
<ol>
<li>Cut the onions in thin slices </li>
<li>Place a pan over medium to low heat and add some <a href="https://www.paragaea.gr/?p=3819">extra virgin olive oil</a>.</li>
<li>Add the onions, salt and let them caramelize over low heat. </li>
<li>Add some water if necessary to prevent them from burning.</li>
<li>Remove from heat when they are ready and keep them aside. </li>

<p>For the beef:</p>
<ol>
<li>Cut the beef in small cubes</li>
<li>Place a pan over high heat and add some <a href="https://www.paragaea.gr/?p=3819">extra virgin olive oil</a>.</li>
<li>Add the diced beef, season with salt and pepper</li>
<li>Sear the meat until it turns golden – brown.</li>
<li>Turn the heat to medium-low and add water to cover the beef and cover the pot.</li>
<li>Keep adding water gradually until the beef is cooked.</li>
<li>When the beef is ready and has absorbed all the liquids add the caramelized onions and the <a href="https://www.paragaea.gr/?p=3762">Balsamic Dressing</a>. </li>
<li>Let it cook for 2-3 minutes until the balsamic dressing comes to boil. </li>
<li>Add some water in case the sauce gets too thick.</li>

<p>For the basmati rice:</p>
<ol>
<li>In a pot add 300g basmati rice, 600ml water, zest from a lemon, 2 branches of rosemary, 3 tablespoons of <a href="https://www.paragaea.gr/?p=3819">extra virgin olive oil</a>.</li>
<li>Place the pot over high heat, stir frequently until it comes to boil.</li>
<li>Lower the heat to medium to low and let it boil slowly until the rice is ready approximately 15 minutes.  </li>

<li>Place a pot over medium heat and add 10 tablespoons of extra virgin olive oil.</li>
<li>Coarsely chop the spinach.</li>
<li>Finely chop the dill, the parsley, the white part of the spring onions.</li>
<li>Add all of them to the pot. Season with salt, paprika and pepper, and sauté.</li>
<li>Add the rice and sauté for 1-2 minutes.</li>
<li>Add 2 cups of water and mix constantly, at medium heat, for 13-15 minutes </li>
<li>If there is no moisture left in your pot, add more water until the rice is boiled. </li>
<li>Add the lemon zest and remove from the heat.</li>
</ol>
<p>Serve with the green part of the spring onions, 3 tbs of lemon flavored olive oil </p>

				<p>1. Season the red mullets with salt and pepper and a liberal splashing of <a href="https://www.paragaea.gr/?p=3819" target="_blank" rel="noopener noreferrer">extra virgin olive oil</a>. Put them in the<br />fridge and let them sit for one hour while preparing the olive tapenade sauce.<br />2. In a mixing bowl add three tablespoons of the <a href="https://www.paragaea.gr/?p=3764" target="_blank" rel="noopener noreferrer">olive paste</a> . Chop the garlic clove and<br />the chilly finely and add them to the mix. Pour in a generous amount of <a href="https://www.paragaea.gr/?p=3819" target="_blank" rel="noopener noreferrer">extra virgin olive oil </a>to loosen the sauce.<br />3. Chop roughly the parsley to add crispness and freshness to the sauce. Add some lemon zest.<br />Then carefully balance the flavours with some lemon juice to taste. You don’t need to season the<br />mix as the olive paste is already salty.<br />TIP! you can use some extra chopped olives to add some coarse texture to the sauce.<br />4. Preheat the pan to a medium-high heat. Put the fish on and let it cook for 2-3 minutes each side<br />depending on the size of the fish. Try not to move it around at all. Once cooked, carefully put the<br />red mullets on the plate. Serve with the olive sauce and a sprinkle of <a href="https://www.paragaea.gr/?p=3819" target="_blank" rel="noopener noreferrer">extra virgin olive oil</a>.</p>					</div>

				<p>1. Preheat the oven on static mode from 180 – 200˚C, depending on the type of oven you have.<br />2. In a bowl, add all the ingredients together and beat them with the mixer for 3 minutes (exclude flour from mix).<br />3. Slowly add all the flour while continuing to mix, complete for approximately 5 more minutes.<br />4. Thoroughly butter and fry the cake pan which you will use for the mix to avoid the cake sticking to its walls.<br />5. Bake the cake mixture in the preheated oven for 40 – 45 minutes.<br />* tip: to make sure that it is cooked uniformly, before turning off the oven, puncture the middle of the cake with a toothpick. If it comes out with no traces of raw mixture stuck on it, then it’s ready</p>					</div>
