Spanakorizo – Traditional spinach and rice dish

Greek spinach and rice recipe.

A traditional dish that every greek mother is making. Served as main course but also as a garnish.

METHOD

  1. Place a pot over medium heat and add 10 tablespoons of extra virgin olive oil.
  2. Coarsely chop the spinach.
  3. Finely chop the dill, the parsley, the white part of the spring onions.
  4. Add all of them to the pot. Season with salt, paprika and pepper, and sauté.
  5. Add the rice and sauté for 1-2 minutes.
  6. Add 2 cups of water and mix constantly, at medium heat, for 13-15 minutes 
  7. If there is no moisture left in your pot, add more water until the rice is boiled. 
  8. Add the lemon zest and remove from the heat.

Serve with the green part of the spring onions, 3 tbs of lemon flavored olive oil 

A perfect garnish for grilled salmon, sea bass and cuttlefishes

100 g extra virgin olive oil
3 tbs lemon flavored olive oil
1 kg Spinach
1 bunch  dill
1 bunch Parsley
Zest from a lemon
water
5 spring onions
200 g glutinous rice
Salt, pepper, Paprika
